The aglucones, genistein and daidzein concentration were 0.41–2.17 and 0.49–1.58 mg/100 g. Neither daidzein in the BRS 233 cultivar nor acetyl isoflavone conjugates were detected in any cultivar tested here. Therefore the malonyl, β-glucosides and aglucones forms corresponded to approximately 67.0%, 31.0% and 2.0% of the total isoflavone content. According to, both the malonylgenistin and malonyldaidzin fractions corresponded to 66.0% of total isoflavone in soybean seeds; these results were corroborated by other reports.

The β-glucosidase activity for cultivars of the early, semi-early and medium maturity groups were 63.44–88.97, 61.10–80.39 and 71.37–86.22 UA/g, respectively. Analysis of variance showed significant differences in the β-glucosidase activity among the 18 cultivars; regression analyses (R2=0.001) and correlation (r=-0.03) between maturity days and β-glucosidase activity were not significant, indicating that maturity days did not influence the enzyme activity. The BRS 213 (early maturity group) and BRS 232 (semi-early maturity group) cultivars presented, respectively, the highest (88.97 UA/g FSI) and the lowest (61.10 UA/g FSI) β-glucosidase activity. Differences were also reported by Carra˜ o-Panizzi and Bordignon; however the β-glucosidase activity in their case ranged from 96.3 to 176.1 UA/g in 51 soybean cultivars (1993/1994 soybean season), sown in Londrina, Brazil, corresponding to 1.8-fold difference. Since all cultivars were grown under similar environmental conditions, the differences observed among the cultivars indicate genetic differences. However, Toda et al. did not observe significant differences in the β-glucosidase activity of four soybean cultivars cultivated in Japan in 1998, and the results varied from 0.02 to 0.03 UA/g.
