關於咖哩的起源有諸多說法,而印度確實為咖哩的起源地,咖哩這兩字的語源來自南印度,以南印度的泰米爾(TIMIL)話來說咖哩是"醬"的意思,這是綜合各種辛辣香料所製作的料理名稱,有人說第一位做咖哩的人為釋迦牟尼,在印度的傳說中,釋迦牟尼是首先教人如何用樹草的果實來調配以為做長生不老的靈藥,並以釋迦牟尼當初傳教的地名"咖哩"作為這靈藥的名稱,而後人將此靈藥當成料理的調味料而廣泛地傳播開來。

隨著印度文明的影響,咖哩自印度大陸傳播到周邊地域。在中世紀的歐洲,香辛料除了做調味料使用之外,更因被當作藥及保存肉類等功能,而成為生活上的必需品,當時歐洲的列強們,為確保取得香料產地,並進行殖民化而在亞洲展開爭奪戰,在1747年英國食譜書上曾記載著,英國將殖民地-印度所產香料帶回國內,使得印度咖哩的風味,再次於英國發揚光大,至19世紀所謂的咖哩粉正式在市面上販售,而到了19世紀後半已非常普遍,並銷往法國及日本。
