    Stinky tofu is made and consumed in different ways in various areas of China. For example, the types of dried stinky tofu made in Changsha and Shaoxing are both very popular, but they are made with different methods, and the resulting flavors are very different. The most famous shop for stinky tofu in Changsha makes the tofu with yellow soybeans marinated in seasoning. The stinky tofu sold in Tianjin is mostly made in the Nanjing style, with a mild aroma.

    Stinky Tofu

    Stinky tofu is a traditional food in Taiwan. You may find it anywhere, from the street stalks in the night markets to the 5-star restaurants. It is a quisine that suits all-- the kings, the queens, and the commons. Stinky tofu is made by two ways: either by soaking in ammonia solutions or by fertmentation under room temperature for more than 24 hours. However, fermentation is normally regarded as the traditional way of manufacture.

    Why is stinky tofu so delicious? There are many different reasons. Some say it is delicious because it is smelly. It is a taste between good and evil. One may describe it as disgusting, but to the others it is regarded as delicious! Another reason why people like stinky tofu is probably that it is served with pickles and hot chili sauce. My personal experience is great to eat stinky tofu with pickles. It tastes like you are in heaven! Stinky tofu may also be stewed to produce a heavy stinky soup. It is served with plenty of vegetables and rice. It really goes well with rice. You will find you eat more rice than you can imagine with the stinky soup.

Stinky tofu could be eaten after preserving for several weeks to several months.

    Stinky tofu is as its name because of its strong smell. From a distance, the odor of stinky tofu would be noticed and it was said to resemble that of garbage. So, many foreigners and even Taiwanese detest it. In spite of its smell, the flavor is surprisingly mild.
