大溪豆干最早出現於1921年,在日治時期,豆干製作多以家庭副業的經營模式操作,除了自家的販售外,部份店家還會到大溪公園兜售。大溪豆干開始蓬勃發展以及大量生產,歸因於石門水庫與慈湖的開放,大批謁靈與觀光的人潮湧進大溪,導至購買豆干的人越來越多,大溪豆干的聲名因而遠播;民國64年慈湖開放觀光,終為大溪豆干開啟了通向成名之路。

水質是決定豆食品質良好與否的關鍵,大溪的豆干業者係引取地下水或採用天然泉水來製作豆干,軟性的地下水經過過濾後,製作出來的豆干不但沒有自來水的消毒味,反而更加香甜嫩Q,由此也賦予大溪豆食獨到的風味。

新竹貢丸之所以聲名遠播,全在於用料及作法。相傳貢丸一名的由來,是因早期業者的作法靠人工持木棒以槌擊肉塊,然後捏製成肉丸,因閩南語中,槌擊為『摃』,因而稱為摃丸或貢丸。而新竹貢丸的材料必須用剛宰殺不久的溫體豬肉,也就是所謂的『活肉』利用活肉新鮮纖維的彈性所做出來的才是好吃貢丸。

大家都知道新竹米粉有口皆碑,新竹米粉之所以受歡迎,是跟新竹聞名全省的東北季風有關。若單就米粉的製作過程而言,最主要的差別在於『風』。每年中秋起迄翌年清明,由於東北季風長驅直入到新竹後,風勢轉驟,一變而為乾燥的焚風,也因此造就了新竹第一名產。

「貢糖」之名來源有二:一說是它曾是民間用來朝聖的御膳貢品,因此冠上「貢」字;另一說則是貢糖在製作過程中必需仰賴人力搥打,以求糖質綿密細緻,閩南人稱之為「摃」。而「貢糖」其實就是花生和糖,冠上「貢」字之後,就從平民的甜點一躍而成為皇帝的零食。
