茄子鑲肉

材料:茄子2條、絞肉半斤、洋蔥碎少許、

調味料:醬油1大匙、水許、胡椒粉適量

做法:

1 先將茄子洗淨,切斜段(約10公分長段),並再橫切一開口(蝴蝶刀)放置旁邊備用。

2 內餡製作:絞肉、洋蔥碎、還有調味料,一起混合伴勻,備用

(可以加點太白粉,增加黏性,這樣在油炸過程可以防止絞肉散掉)

3 填餡:先將茄子切口內,塗上少許太白粉,把拌好的肉塞入茄子切口,表面塗少許太白粉拌水,以防散開,再用地瓜粉裹住茄子,放置旁邊備用

4 油炸:起油鍋,油燒至約160˚C,用中小火,將裹好粉的茄子炸至熟,最後在用大火炸,將油逼出,撈起即可

(油溫不可以過高,在炸的時候要防止表面黒掉,茄子很容易熟,重點是裡面的餡有沒有熟,撈起的時候下面要墊紙巾或是用濾油網放在下面,這樣油就不會被茄子吸收)

建議:最好炸完就立刻吃

 

醬料依個人喜好沾,可以用檸檬鹽沾很好吃了

    茄子鑲肉 fried eggplant filled with minced pork

    ingredients: 2 Chinese eggplants, 300g of minced pork, some finely chopped onion

    做法directions:

    Wash eggplants clean and cut in to 10cm sections. Split through each section lengthwise, leaving one quarter of the way uncut. ( the so called "butterfly " style slivering). Set aside.

    3 填餡:先將茄子切口內,塗上少許太白粉,把拌好的肉塞入茄子切口,表面塗少許太白粉拌水,以防散開,再用地瓜粉裹住茄子,放置旁邊備用

    Filling the eggplants: inside each section of the eggplants, coat the cut side with thin layers of corn starch, fill in the flavored pork, shape and smooth out the filling with starch water, preventing it from falling apart, then coat with some tapioca powder(or plain flour).

    4 油炸:起油鍋,油燒至約160˚C,用中小火,將裹好粉的茄子炸至熟,最後在用大火炸,將油逼出,撈起即可

    Frying: heat the wok with oil, over medium low heat of 160C. Fry the filled eggplants till fully cooked then turn up the stove to high heat to let excrete the excessive oil. Remove from wok to drain.

    (油溫不可以過高,在炸的時候要防止表面黒掉,茄子很容易熟,重點是裡面的餡有沒有熟,撈起的時候下面要墊紙巾或是用濾油網放在下面,這樣油就不會被茄子吸收)

    (To prevent from scorch, do not set the heat too high. Be careful and do make sure that the filling is fulling cooked, while the eggplant takes less time to be cooked. Drain the finished eggplants over kitchen paper towel to let soak the excessive oil. )
