菜名:紅燒肉球

材料:絞肉.洋蔥.青江菜.鹽.白胡椒.香油.醬油.太白粉.蛋.蒜頭.地瓜粉.砂糖

做法:

1.將整顆去皮洋蔥切碎後.炒成褐色.再切半顆洋蔥絲備用.蒜頭拍碎去皮.青江菜剝成一片一片以水清洗乾淨備用

2.在絞肉內放入炒過洋蔥.鹽少許.白胡椒少許.香油少許.醬油適量.太白粉少許.全蛋一顆.將它拌至有黏性.均勻後.放置10~15分鐘讓它入味

3.起油鍋.將入味後的絞肉以手.捏成圓球狀.大小適中.沾上地瓜粉.下鍋油炸至定型.上色即可撈起.備用.

4.準備一鍋滾水倒入沙拉油適量.鹽巴適量.將洗好的青江菜倒入燙熟.撈出.瀝乾即可盤飾備用

5.另外起一個炒鍋爆香蒜頭.洋蔥絲.有香味後加入砂糖適量.炒出搪色後倒入醬油適量.開水適量後拌均.倒入炸好的肉球以小火燉煮10分鐘.入味後以太白粉.水1:1的量下去勾薄芡即可裝盤.上菜

    做法 Directions:

    Prepare one finely chopped onion, sauted till golden brown. Halve another onion, slice into fine strips, set aside. Peel and smash the garlic. Wash pak choi leaves thoroughly.

    2.在絞肉內放入炒過洋蔥.鹽少許.白胡椒少許.香油少許.醬油適量.太白粉少許.全蛋一顆.(用手或筷子,順同一方向攪拌)將它拌至有黏性.均勻後.放置10~15分鐘讓它入味

    Mix the minced pork with sauted onion, one pinch of salt, a little bit of white pepper, sesame oil, corn starch, some soy and one egg. Then (, with hands or chopsticks,in the same direction, ) combine the mixture till well blended and consistency gets sticky and glutinous. Set aside for 10~15mins to let the flavor penetrate through.

    3.起油鍋.將入味後的絞肉以手.捏成圓球狀.大小適中.沾上地瓜粉.下鍋油炸至定型.上色即可撈起.備用.

    Heat the wok with adequate oil ready to deep fry. With hands, shape the flavored minced pork into balls of suitable sizes. Coat the meat balls with tapioca powder for deep fry. Fry the balls to firm the shape until golden brown. Set aside.

    4.準備一鍋滾水倒入沙拉油適量.鹽巴適量.將洗好的青江菜倒入燙熟.撈出.瀝乾即可盤飾備用

    Prepare a pot of boiling water with pinch of salt and some oil drizzled on the top. Scald the pok choi leaves in the hot boiling water then drain them on the sifter. Arrange onto the plate to garnish.

    5. 另外起一個炒鍋爆香蒜頭.洋蔥絲.有香味後加入砂糖適量.炒出搪色後倒入醬油適量.開水適量後拌均.倒入炸好的肉球以小火燉煮10分鐘.入味後以太白粉. 水1:1的量下去勾薄芡(增加亮澤感)即可裝盤.上菜

    Heat another wok with some oil, over medium heat, then saute the minced garlic, onion strips till the flavor is released. Add sugar to saute till caramelized then add in some soy, water and the meat balls. Bring to the boil then turn the heat down to simmer for 10 mins till the flavor penetrate through. And last, slightly thicken the sauce with corn starch water,mixed in proportion of one to one,(to give it a shiny glossy coat) ready to serve.
