Practice essential in developing tray and dish-handling skills. Never carry more than you can manage. The way you carry dishes without a tray is just as important as on a tray or in a bus tub. resting a stack of plates in the bend of the arm should be avoided. as the stack may collapse. Instead, to carry a stack of clean plates. cover the stack with a clean napkin and carry directly in front of. and slightly away from. The body as shown on facing page.

The carrying of heavy or awkward loads should not be attempted until the server

has practiced enough(see photo to right) to do so confidently.

    練習端托盤與餐盤的基本技巧練習。絕不端超過你/妳所能負荷的數量。你/妳不使用托盤的端盤方式與使用托盤或將餐盤放於收拾餐盤箱內端一樣重要。

    *Bus tub 的中文意思是我們平常在百貨公司或大賣場等地方的美食街所看到,清潔人員放在手推車上推或用手端,專門放收拾的餐具的大塑膠盆,但正確中文名我不清楚也找不到,不好意思。
