Being unable to see you, I am like a derailed train, the thought of thinking of you is out of control (beyond control).
When I am not able to (I cannot) see you, it can drive me to deviate from the normal state and the thought is like an uncontrollable train.
The second translation is kind of rearranging your Chinese statement, hopefully, you can still grasp its meaning. I don't mean to alter your statement, but to offer you an alternative way to express in English.

After reading the translation I did, I feel it might be better to use "derailing" instead of "derailed". The reason is when it is "derailed", everything is already DONE. The scene might be chaotic, but mixed (no further development is possible).

using "overflow" to describe it. I feel it is really a better idea than my using "fill"

I like Humble Bee's interpretation: "a train running off track", which conveys a state of confusion, fear, and uncertainty – when the love one is not around.

"脫軌的列車" 由字面翻譯是 Derailed train˙ 可是 Derailed train 主要用來描述災難或是摧毀的事物
因為你是要強調你的思緒失去控制不停的繼續想˙ 我覺得比較恰當的英文形容是 Runaway Train (速度失去控制在鐵軌上不停往前行駛的火車)
When I can't see you, my mind is a like a runaway train and I can't stop thinking about you.

Runaway train 不一定會造成災難破壞˙ 可能只是一段時間內速度失去控制˙ 但還是有機會控制住毫無損壞的停下來
Derailing train 的結果一定會造成某主程度上的災難跟破壞

假如 google 搜尋 runaway train 跟 mind 兩個字一起˙ 會發現很多英文歌詞都是用 runaway train 來形容感情上無法控制的思念他人˙
但是很少有用 derailing train 或是 derailed train 去形容這情況
