A bistro is small in size, European style, commercial restaurant

A joint is more a place to meet people and have foods together, typically small in size and only few selections. So, probably only pizza, burger, or sandwich places will call themselves "joints".

Eatery is generally a place to eat.

Let me suggest a few more:

Trattoria - a place serving wines and foods, usually Italian, without printed menu but usually bigger and more formal than Osteria.

Osteria - a place serving wines and foods, usually Italian. Very small in size and informal.
