    "deep fried mashed taro"

    "mashed taro the crisp"

    "mashed taro short cake"

As I know in Chinese "酥" can be achieved by using lots of lard or deep fried. If your "芋泥酥" is not made by the above method, then my translation is questionable.

using lard is to create lots of layers of flour skin that wraps around the mashed taro.

Then "mashed taro the crisp" might be closer to you have explained.

or "baked taro crisp". The reason I want to use words like "mashed", "fried", or "baked" is you present this snack to foreigners, from the name you tell them, they can immediately have the idea what it is, so you don't need to explain too much.
