請問有人知道Cinder Toffee嗎?或是能否幫忙翻譯?

去倫敦時朋友送了一包Cinder Toffee

很喜歡,但不清楚是哪裡買的

也找不到台灣哪裡有賣,所以想自己做

有找到Waitrose的網址,英文不是很好,所以大概知道個邊邊,卻不是很肯定

上面寫材料要300g細砂糖、200g糖漿、2匙蘋果醋、2匙小蘇打

做法是先將白糖、糖漿、蘋果醋及150ml水大火煮沸

其他看不是很懂...

第一個是只要烤模上油隔水降溫嗎?

小蘇打又是何時加入呢?

我英文真的還不夠好= =

    1. Butter a 20cm square shallow tin and line the base with baking parchment. Fill the sink 10cm deep with cold water – add some ice if you have any. Fill a glass with cold water and keep it by the hob

    底層用烘焙用的羊皮紙之後放上20公分的正方錫箔紙在上面然後再塗抹奶油.用冷水把水槽裝滿到10公分的位置(有冰塊會更好).再來裝杯冷水放在火爐的旁邊,有溫度的地方.

    2.Put the sugar, syrup, vinegar and 150ml water in a very large saucepan (you need to allow plenty of space for the toffee to bubble up).

    把糖,糖漿,醋,和150ml的水放在一個很大的平底深鍋裡(你要有空間給太妃糖來溶化)

    Stir over a low heat, without boiling, until the sugar has completely dissolved.

    用小火攪拌,不能讓他沸騰,直到糖完全溶化

    This is crucial. Now stop stirring.

    現在很重要了,停止攪拌.

    Cover the pan and let it bubble for 2 minutes – this will help to dissolve sugar that has set on the sides of the pan.

    Remove the lid and let it boil until it has reached hard crack stage (150°C on a sugar thermometer).

    Test for this by taking the pan off the heat and dripping a little syrup into the glass of water.

    你可以把火關掉後,拿剛剛放在旁邊的水然後滴一些糖漿來測試你有沒有達到這個溫度

    If it is hard and snaps cleanly without stickiness, it has reached the right stage.

    如果那糖漿變硬然後剝開不會有黏黏的感覺,那你就在對的溫度了

    If not, put the pan back on the heat and carry on boiling for a few minutes longer.

    如果沒有,再回去煮幾分鐘一下

    As soon as the syrup’s at the hard crack stage, take it off the heat, plunge the bottom of the pan into the sink of cold water and stir in the bicarbonate of soda – it will boil up like a mini volcano erupting.

    之後把鍋子拿到水的上面(水槽裡),鍋子的底部泡水,然後拿小蘇打粉攪拌(他會像迷你的火山一樣噴發)

    3.Once it's calmed down a little, stir once more and pour into the prepared tin.

    等他冷卻了一下後,再攪拌一次,之後倒入你準備的錫箔紙上

    As soon as it is cool enough to hold its shape, score the surface into squares with an oiled knife. Leave to set solid, then break into chunks.

    等到他完全冷卻後,拿一支刀子塗膜一些油在上面,然後用那刀子切成正方形(錫箔紙上面的),最後你就可以大塊的剝開了
