The second pilot study was conducted to determine how consumers

perceive the healthiness of the selected six menu items

under the absence of nutritional information as well as under the

presence of manipulated nutritional values. Participants were randomly

assigned to receive one of the three levels of nutritional

information and asked to evaluate six menu items presented in a

random order. The order in which the menu items were presented

was also rotated to reduce the order effect. The reliability of all the

measures was tested.

A total of 94 undergraduate students volunteered to take part

in the second pilot study; each received extra course credits as an

incentive.

3.2. Primary study

3.2.1. Sample and process

A total of 319 observations were collected using a computerbased

experiment program; thus, approximately 27 participants

were exposed to each of the 12 conditions. An introduction page

that explained the study and procedure was presented, and then

the participants were shown a menu including three different items

with or without nutritional information. Questions were presented

one at a time on the screen. The participants were shown the

designed menu while they answered all the questions, so that they

responded to each question by comparing the menu items without

being required to guess or remember the provided information.

The sample included equal numbers of male and female participants,

and the majority of the respondents (70%) were Caucasian.

Ninety-two percent of the respondents were undergraduate students,

with an average age of 22 years. They reported an average

monthly income of $743.02 and spent an average of $212.72 per

month on food away from home. More detailed demographic information

is shown in Table 1.
