石鍋拌飯有「媳婦飯」的別稱,主要是因為早期韓國媳婦地位較低下,韓國媳婦不能與公公 .婆婆.先生同桌吃飯,有時僅能利用剩下的飯菜填飽肚子,因此石鍋拌飯便是在這種背景下產生的餐點,不過由於配料、湯頭和份量的講究,現在的石鍋拌飯吃起來一點都不心酸

韓式拌飯的起源有兩種:一是韓國平民百姓將剩菜放進飯裡,加一些辣椒醬拌著吃,天冷便用石鍋熱著;另一說法是因為皇帝勤政愛民,不喜歡吃御廚準備的精緻菜餚,於是要御廚把菜全部倒入碗裡拌勻,就是現在的石鍋拌飯。

韓國的拌飯和上海的菜飯有類似的由來。很久以前,上海人把剩菜剩飯拌在一塊吃,就成了後來的菜飯。而韓國人每餐必備的涼拌菜,也是吃不完,但節省的韓國人又捨不得丟,就留著和剩飯一起加熱,再拌上好吃的醬料,就成了新的一餐。

現在的拌飯當然都是擺上新鮮剛做好的蔬菜,豪華的會加點海鮮或牛肉,但原始的拌飯多為清淡的蔬菜、荷包蛋與飯,甚是健康。

一般石鍋拌飯所使用的器皿是黑色的厚大石碗,盛上米飯、上面舖蓋各式各樣蔬菜、肉片、生雞蛋、韓式甜辣醬。有此一說,                                                        拌飯中所擺放的食材是根據養生學中最重視的青黑紅黃白五行顏色來配置的,是不是有此考據並不清楚,因為在韓國各地方所呈現的拌飯食材皆不同,                                  除了生雞蛋、肉品、野菜、泡菜之外,會選用當地特有的或是隨手可取得的食材作為內容物,有些高檔的餐飲還會放進頂級的松茸菇。

而韓國冬天冷到根本不易種出蔬菜,他們就會像台灣的客家人一樣,在每年十月之前將部份蔬菜在太陽底下曬乾,冬天時就可以拿出作為拌飯的食材。

為了讓客人在品嚐石鍋拌飯美味之前也能有亮麗的視覺享受,一般在配菜方面多會選用紅蘿蔔、金針菇或香菇、青江菜、黃豆芽菜、海帶芽等5種不同顏色的蔬菜,                                         再配上醃漬入味、肉質較好的沙朗牛肉片(或豬肉片)、雞蛋,就是一份美味滿分、有豐富的視覺享受的石鍋拌飯。                                                             火紅色的泡菜則是以小菜方式呈現、由客人自行選用,因為要顧慮到有些客人不吃辣。

在韓國是用生雞蛋來拌飯,這樣才能讓所有的食材與雞蛋充分融合、添加入口時的滑潤感,而且石鍋本身具有高溫,所以經過攪拌的雞蛋已不再是全生的狀況。                                       不過因為考量到台灣食客較無法接受生雞蛋,所以會依客人需要加入不同熟度的雞蛋。
