大廚師為何要戴高帽

而且好像廚藝越厲害 帽子越高

這樣做菜不會不方便嗎

    Chef is french for chief -In a kitchen where there is a lot of chefs it is called a kitchen brigade- the height of the hat determined where you are in rank in the kitchen brigade. not so much these days unless you are in a place such as the Savoy or Ritz where kitchen etiquette is still maintained.

    These days it's more for practical and hygiene reasons.Wearing a hat in hot conditions where you sweat stops the sweat running into your eyes (or dripping into the food I suppose) - also to keep hair out of the way.

    I personally hate to see anyone cooking in a commercial kitchen without a hat or hairnet - ewwww - don't want all that sweaty greasy hair in my food - also a hat stops people running their hands through their hair while touching and cooking food - dirty habit!!
