大家好我今天要介紹的是台灣飲食文化

「民以食為天」,「飲食」是人類生存的基本需求,隨著歷史的演變及各項因素形成今日的台灣飲食。

1945年前農業與日治時代

早期台灣人民生活困苦,大部分的人只能吃蕃薯粥,台灣沿海漁民平常捕魚去,遇到秋、冬不能捕魚的日子,就在家附近擺擺小攤子賣麵貼補家用,度過不能捕魚的小月,這就是度小月擔仔麵的由來。

在日本殖民期間,日本的飲食文化如天婦羅、壽司及生魚片等,也在這個時期悄悄的影響著台灣的飲食習慣。

國民政府遷都來台,大批來自中國大陸的軍民,更將其地區特有的飲食文化融入了台灣既有的飲食文化中,並衍生出所謂的眷村飲食文化,其中以麵食為大宗,諸如饅頭、刀削麵、牛肉麵和水餃等。

提起牛肉麵,會以為是由四川引進的,其實在四川賣的是小碗的紅湯牛肉。真正將牛肉與麵條合成的牛肉麵,創於台灣 。

隨著電視傳播媒體的逢勃發展,美食節目帶動了新一波飲食文化的革命,讓中國八大菜系在淺移默化中,融入台灣飲食文化,我現在介紹八大菜系代表的菜色。

四川菜系(川菜)、淮揚菜系(蘇菜)

江浙菜系(浙菜)、福建菜系(閩菜)

廣東菜系(粵菜)、湘鄂菜系(湘菜)
