The sentence itself just means the person didn't even notice they were being stereotyped.
Pigeonholing is classifying things into a small number of categories (usually, mutually exclusive ones). For example in this case, being a girly-girl versus being a tomboyish-girl OR being spoiled versus being not spoiled.
