Cake

3 ounces unsweetened choclate ,grated or finely chopped

2 cups all –purpose flour

1 teaspoon baking powder

¼ teaspoon cream of tartar

½ teaspoon salt

2 large eggs

¾ cup sour cream

1 teaspoon vanilla or chocolate extract

2 cups powdered sugar

1½ cups chocolate rum Icing

1 Position a rack in the center of the oven and preheat the oven to 350 degrees.Lightly grease and flour two 9-inch round cake pans.

2 To make the cake,melt the chocolate.Remove from the heat.

3 combine the flour,baking powder,cream of tartar,and salt.

4 In a lage bowl,using an electric mixer on high speed,beat the but-ter and sugar until light and fluffy. Beat in the eggs. Beat in the sour cream and vanilla extract. Beat in the melted chocolate. Divide the mixture and pour into the two prepared pans and spread evenly.

5 Bake for 30 to 35 minutes, or until a cake tester in serted into the center comes out clean. Cool in the pans on wire racks for 10 minutes. Invert onto the racks to cool com-pletely.

6 To make the filling, in a medium bowl, using an electric mixer on medium speed,beat the powdered sugar, shortening,and chocolate syrup until smooth and spread-able.

7 Make the icing.

8 To assemble, place one cake layer on a serving plate and spread evenly with the filling. Place the second layer on top and frost the top and sides of the cake with the icing.
